So my husband & I decided to start all over and find a new theme. It didn't take us long to come up with the new one {thankfully}. After thinking about some of Weston's favorite toys/ activities, we came up with....
Under the Sea
He loves watching my mom's fish tank and his favorite toy is sea-themed, so it was perfect. Now on to the inspiration board.
For the invitations, I want something that represents a 1st birthday, but doesn't look babyish or cheesy. Love these from Etsy seller TooCuteInvites

I've already got the sea-themed food planned out. Here's what's going to be served under the sea:
-Turkey, Ham & Roast Beef Submarine Sandwiches
-Meatballs - Sea Urchins
-Pigs 'n a Blanket - Sea Snails
-Cucumbers - Sea Cucumbers
-Veggie Tray - Crunchy Coral
-Fruit Salad - Fruit of the Sea
- Pasta Salad - Sea Shell Surprise
- Mac & Cheese - Sea Shells & Cheese
Drinks will be also sea-themed. A blue drink will be ocean water and my mom's slush punch (it's yellow) will be sunshine. All the food will be labeled with little cards decorated to match.
I've already got some great decorations in mind as well. For example, Weston's gift table will look like a treasure chest and have a sign that says something like "Weston's Treasure". There's going to be blue tablecloths draped from the ceiling and taped in the windows of the venue so you get the affect of being "under the sea."
I'm SOOO excited for Weston's party. I can't wait for his party to get here, but I'm so glad I have 4 months to plan. It'll be here before I know it.
